A Delicious Classic Pastina Recipe

  • 1 cup pastina (small pasta)

  1. In a large pot, bring the chicken or vegetable broth to a boil. Add the pastina and cook according to the package instructions until al dente. Once cooked, drain and set aside.
  2. In the same pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they become fragrant and translucent.
  3. Add the diced carrot and celery to the pot and continue to cook for about 5 minutes, until the vegetables have softened slightly.
  4. Stir in the frozen peas and cook for an additional 2 minutes until they are heated through.
  5. Return the cooked pastina to the pot with the vegetables, stirring well to combine. Season with salt and pepper to taste, adjusting the seasoning as needed.
  6. Sprinkle the grated Parmesan cheese over the pastina mixture and stir until the cheese has melted and coated the pasta evenly.
  7. Reduce the heat to low and let the flavors meld together for a few minutes, allowing the pastina to absorb the delicious aromas.
  8. Once ready, remove the pot from the heat. Serve the pastina in individual bowls, garnishing each serving with a few fresh basil leaves for added freshness and color.
